Why it matters
Water heaters ship set by a factory that has never met your household. The number that matters is what comes out of the tap, and the trade told straight:
- 120°F is the standard safety setting — at 120, water takes minutes of contact to burn skin, not seconds. It also slows mineral scale and shaves the standby bill.
- 140°F scalds fast — about five seconds to a serious burn, faster for kids and older adults, who have thinner skin and slower reflexes.
- The honest complication: Legionella bacteria can survive in a tank held at 120. The risk is small in a healthy household on chlorinated city water, and the belt-and-suspenders answer exists — store hot at 140, deliver at 120 through a $150–$350 mixing valve — but for most homes, 120 at the tap is the right plain call, and it's the one pediatricians and the CPSC make.

Straight from the factory, plenty of water heaters run 140°F. At 140, a child's skin sustains a serious scald in about five seconds — tap-water scalds put thousands of people in burn units every year, mostly kids and older adults. The dial costs nothing to turn. The trade-offs are real but small, and they belong to you, not the factory.
Two ways to get it done

You'll need: Kitchen or meat thermometer, Flathead screwdriver (gas tank models).
- Measure reality first: run the kitchen tap pure hot for two minutes, fill a mug, read the thermometer. That number — not any dial — is your starting point.
- Gas tank: the dial is on the gas valve near the floor. Marks are often just warm/hot/A/B/C — turn it a notch toward cooler, wait 3+ hours (or overnight), re-measure at the tap. Repeat until the mug reads ~120.
- Electric tank: flip the breaker off first, always. Remove the upper and lower access panels, fold back the insulation, and set BOTH thermostats to 120 with a flathead — they don't talk to each other, and a mismatched pair causes lukewarm mysteries. Panels back on, breaker on.
- Tankless: set 120 on the panel. Done. (If yours is locked higher, the manual's two-button unlock takes a minute.)
- Re-measure at the tap in a day. Dial positions lie; thermometers don't.

A plumber will do this in the course of any water heater visit for $75–$150 standalone — worth paying only if the electric panels or a stiff old gas valve genuinely spook you, and there's no shame in that; breaker-off wiring work isn't everyone's afternoon.
The legitimate upgrade to say yes to: if your household keeps running out of hot water at 120, the right fix is storing hotter with a thermostatic mixing valve at the tank so the taps still get 120. Planned and installed, that's a fair $150–$350. The wrong fix is quietly cranking the dial back to 140 and giving the scald risk back to whoever in your house is youngest or oldest.
Ask the tech
- What temperature is it actually delivering at the tap, measured — not just where the dial points?
- If we keep the tank hotter for capacity, what does a mixing valve cost installed, and where does it go?
- On electric models: did you check both thermostats agree, top and bottom?
Red flags you're being upsold
- A 'thermostat replacement' quote for what is a dial adjustment. The thermostat that needs replacing has symptoms — no hot water, tripped limit — not just a high setting.
- A mixing valve pitched at emergency-plumbing prices. It's a fine $150–$350 installed part, planned; it's not a $700 same-day crisis.
- Anyone who turns your tank down and leaves without telling you the dishwasher and Legionella trade-offs out loud. The setting is a judgment call; you should hear the judgment.

DIY today — it's a dial and a thermometer. If your household needs the tank hotter for capacity, hire the $200 mixing valve instead of living with 140° taps.
